Hops provide beer with distinct bitterness, flavor, and foam. Traditional hopping at various points in the brewing process is the mainstay of producing distinctive craft beer, but often suffers from low utilization and lack of flavor control. This presentation will examine how advanced hop extracts and flavors, for use in the kettle or later in the brewing process, can be utilized to control beer character, often at lower cost.
